In homage to the end of the Roman philosopher during the cataclysmic and best-known eruption of the volcano, and to start the year resonating with powerful transformative energy, I dub thee Vesuvius. The electric system wasn&#8217;t back in service yet, so this was an outdoor brewing session. It was ~40\u00b0F and overcast outside.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This beer was roughly patterned after the following recipe:<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-wp-embed is-provider-brew-your-own wp-block-embed-brew-your-own\"><div class=\"wp-block-embed__wrapper\">\n<blockquote class=\"wp-embedded-content\" data-secret=\"zWoiWg3TT2\"><a href=\"https:\/\/byo.com\/recipe\/russian-river-brewing-co-s-pliny-the-elder-clone\/\">Russian River Brewing Co.&#8217;s Pliny the Elder clone<\/a><\/blockquote><iframe loading=\"lazy\" class=\"wp-embedded-content\" sandbox=\"allow-scripts\" security=\"restricted\" style=\"position: absolute; clip: rect(1px, 1px, 1px, 1px);\" title=\"&#8220;Russian River Brewing Co.&#8217;s Pliny the Elder clone&#8221; &#8212; Brew Your Own\" src=\"https:\/\/byo.com\/recipe\/russian-river-brewing-co-s-pliny-the-elder-clone\/embed\/#?secret=kDl50nK1At#?secret=zWoiWg3TT2\" data-secret=\"zWoiWg3TT2\" width=\"600\" height=\"338\" frameborder=\"0\" marginwidth=\"0\" marginheight=\"0\" scrolling=\"no\"><\/iframe>\n<\/div><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Recipe Type:<\/strong>&nbsp;All Grain<br \/><strong>Yeast:<\/strong>&nbsp;WLP090<br \/><strong>Yeast Starter:<\/strong>&nbsp;2L starter (two 1L steps) from very old WLP090<br \/><strong>Batch Size (Gallons):<\/strong>&nbsp;~5<br \/><strong>Original Gravity:<\/strong>&nbsp;1.065 (including sucrose)<br \/><strong>Final Gravity:&nbsp;<\/strong>1.0??<br \/><strong>IBU:<\/strong>&nbsp;100+<br \/><strong>Boiling Time (Minutes):<\/strong>&nbsp;90<br \/><strong>Color:<\/strong><br \/><strong>Primary Fermentation (# of Days &amp; Temp):<\/strong>&nbsp;<br \/><strong>Secondary Fermentation (# of Days &amp; Temp):<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">11# 2-row<br \/>12oz Carapils<br \/>12oz C40<br \/>1# Sucrose (added to the end of the boil)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">2 tsp Gypsum added with FWH<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1.25oz Nugget (11.7%) \u2013 FWH<br \/>0.5oz Nugget (11.7%) \u2013 45 min<br \/>0.5oz Simcoe (11.9%) \u2013 30 min<br \/>whirlfloc \u2013 10 min<br \/>1# dextrose &#8211; 10 min<br \/>2oz Cascade (5.7%) \u2013 0 min, whirlpooled between 160\u00b0-180\u00b0<br \/>1.5oz Simcoe (11.9%) \u2013 0 min, whirlpooled between 160\u00b0-180\u00b0<br \/>1.5oz Nugget (11.7%) &#8211; 0 min, whirlpooled between 160\u00b0-180\u00b0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mashed in 4g of strike water at ~175\u00b0, which landed us perfectly at 149\u00b0, mashed for 60 minutes<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">boiled for 60 minutes, chilled and whirlpooled at about 160\u00b0 for about 15 minutes, then chilled in the counterflow and collected ~5 gallons, with lots of schmutz<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">pitched wort, transferred to basement, and the carboy is sitting around 65\u00b0<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/14\/24 &#8211; need to dry hop 2 weeks after brewing: 2oz each of simcoe, nugget, cascade<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">1\/27\/24 &#8211; the basement was very cold, and the fermentation seemed to stall when the wort fell below ~62\u00b0. The wort got as cold as 60\u00b0. I brought the carboy upstairs, roused the yeast by swirling the carboy, and bought a carboy heater. I brought it up to 64, then 66, then 68\u00b0. It seems to have stalled at around 1.016, bringing us to above 6.7%.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I transferred to secondary on top of 2oz each of Cascade, Nugget, and Simcoe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Yeast cake was split between 2 carboys for batch 108.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>After about a year and a half hiatus, we return on January 1st, 2024 to brew a Pliny the Elder clone.
